Recipe 1: Fresh Zucchini with Egg

Egg and zucchini, both are healthy! So, this is my favorite for a quick healthy breakfast meal. Take a skillet and place it over medium heat. Pour a tablespoon of vegetable oil on the skillet. When the skillet is hot, add in the sliced onion. Take a small onion, using big onions won’t work.

Use a spoon to stir the onion on the skillet and when the color of the onion starts to change, add zucchini. If you want, you can add a bit of salt for taste. Now, cook for 3-5 minutes in medium-high heat. Zucchini should start getting mushy in the heat, and now it’s time to add the egg. Simply, break the egg and pour it into the skillet. Use a spoon to scramble the egg apart and cook for another 2 minutes until the egg is cooked.

 When cooking, keep tossing the zoodles with the spoon or pasta tong so that it is cooked evenly.

Recipe 2: Zoodles Soup with Coconut

This is the best recipe to have when you are not in a mood of cooking. You only need to have a bowl of coconut water, coconut, and spiralized zucchini.

Take a bowl of coconut water and pour sliced coconut into it. Now, add spiralized zucchini in it and enjoy!

Some of my friends could not eat soup for the lack of salt. If you are like them, consider adding a small amount of salt with the spiralized zucchini before pouring into the bowl.

The recipe tastes best when you can allow the zucchini to sit for around two hours and then eat.

Recipe 3: Raw Zucchini Salad

Who does not like salad? And when it comes to zucchini salad, you’ll not forget the taste for long, I bet!

To make the salad, you will need spiralized zucchini, a sliced tomato, a sliced onion, a sliced green chili, mint leaves, sliced carrot (optional), and salt.

Take a bowl of zoodles, and add all the ingredients I have mentioned above. You need to use salt carefully so that you do not end up making the salad salty.

You can use hot tomato sauce with the salad for giving it a spicy flavor. You should do this only if you like spicy food.

Who does not like salad? And when it comes to zucchini salad, you’ll not forget the taste for long, I bet!

Recipe 4: Zucchini Spaghetti Recipe in Microwave

Cooking zucchini noodles in the microwave needs additional work. If you are a beginner in the zoodles world, I do not recommend trying the recipe in the first place.

For cooking the spiralized zucchini in a microwave, slice the zucchini with spiralizer in a bit thicker shape. Apply salt over the zucchini and mix thoroughly to remove moisture from the zoodles. Let the noodles sit for around half an hour.

After that, rinse the zoodles and remove all the water with the help of a colander. Use paper towels to remove extra water from the zoodles.

Now, place the spiralized zucchini in a skillet and add sliced onion, tomato, and green chili with it. Place the skillet in the microwave for 5 minutes in medium heat.

Your zucchini spaghetti should ready to be consumed!

Zucchini Noodles Cooking Tips

  • Do Not Peel off the Skin

Beginners tend to peel off the skin of the zucchini before spiralizing. This is a big mistake when it comes to spiralizing. Zucchini has around 85% water content in it and when you peel off the skin, the moisture eliminates quickly and you’ll see that the zucchini appears to be lifeless. The taste of zoodles also differs by peeling the skin off.

  • Don’t use Salt Before Starting to Cook

Using salt on zucchini noodles before starting the cooking will remove the moisture from the zoodles. If the recipe you are following does not instruct you to do so, do not use salt before adding zucchini on the heated skillet.

  • Cook for a Short Period of Time

As I’ve said, 4/5th of the zucchini is water. If you cook for a long period, the veggie noodles will be tasteless. So, cook zoodles for 5-7 minutes in medium heat before eating. Cooking more than that will ruin all your efforts.

  • Pick the Right Zucchini

Some folks complain about the recipes that whatever they try, it comes out tasteless. If this happens to you too, check every little detail of cooking for the fault. If you are not seeing anything wrong in your cooking, it must be the zucchini that is ruining your efforts! Try to pick fresh and different zucchini than that of the previous one for a better result.

  • Avoid Microwave

Cooking zucchini is so simple that you can do it within 5 minutes! Zucchini noodles are best cooked when stir-fried. You need to constantly toss the zoodles for the authentic taste. Using a microwave to cook the zucchini not only eliminates your way to toss the zoodles but also make the zoodles tasteless.

Another problem that evolves in the microwave is that the moisture gets stuck in the microwave and the zoodles get soggy.
